Breakfast is my FAVORITE meal of the day, that’s what drew me to this Farmland® Homestyle Sausage campaign! I shared a Bacon-Wrapped Scallop recipe recently, and this time, we are doing breakfast. Seriously, I go to bed at night excited to wake up just to get my eggs and bacon on. OK, yes, there is healthy oatmeal in there too, but when we do splurge on the calories, that first dish involves eggs, meat, potatoes and toast. Recently I discovered that Farmland® – whose products are cured and smoked with a decades-old secret method – has breakfast links that are made of both bacon and sausage. I decided to try them out for the weekend!
My idea was to take small flour tortillas, lightly grill them with a touch of butter and make crispy breakfast tacos. Follow along to see if it all worked out!
Ingredients:
- Farmland® Homestyle Sausage (It’s gluten free with no MSG; and available in links and patties – Maple or Bacon Sausage flavors! For this recipe, I used the Bacon Sausage Links!
- Eggs
- Shredded cheese
- Small flour tortillas
- Butter
- Salt and pepper to taste
- Sides: Potatoes, pico de gallo
First cook up the Farmland® Breakfast Sausage links until all the pink is gone from the center. Then dice them up into small pieces.
Next, scramble up some eggs and grade cheese of your choice. Cheddar or Pepper Jack are my faves.
Put a thin pat of butter in the pan and set the small flour tortilla in, let it toast on both sides until it get a flaky outing. Spoon the eggs, diced links (one link per taco) and cheese, fold over one side and let it heat until the cheese is melted.
That’s it! Make a batch for the family. You can also add pico de gallo for a kick, and peppered papas on the side too!
