The best food concoctions come from Thanksgiving leftovers. There’s always a little bit of this, a little bit of that – the question is, how do you build a worthy meal? I came up with two fun and creative ideas: Empanadas and concha sandwiches using all the leftovers!
The inspiration comes from the new Vive Mejor #TuTwist Holiday Campaign. We all know how personal sandwiches are, especially around the holidays. The weirder, the better! Hellmann’s is celebrating that by inviting people to share their concoctions. Visit this page for other ideas other people came up with.
My goal is to create Latin-inspired sandwiches using turkey day remnants. Vive Mejor calls it a “Tu Twist.”

For my idea, this is what I came up with. First the Thanksgiving Dinner Empanadas! The extra tang to pull it all these together is Hellmann’s Real Mayonnaise.
For the empanadas, you’ll need: Turkey, stuffing, mashed potatoes, gravy, cranberries, whatever else you want. AND a roll of croissants.
Add some mayo to the mashed potatoes to make them creamy!
Then spread out the rolls on a cookie sheet and add the filling.
Fold over and use a fork to seal the edges. Bake for 12 minutes at 375 degrees.
Remove and serve with gravy on the side!
For the conchas, yes this will be sweet, so skip the cranberries on this one. I’ve seen burgers served on conchas (Mexican sweet bread), so I thought why not a turkey sandwich? First thing, add a smear of Hellmann’s mayo!
This concha sandwich idea works great if you are wanting to make use of all those family leftovers, right?
Between both ideas, you’ll have enough for a family feast the day after!
