Game day baking, let’s do this! These ¡Viva México! cookies are for all of us who are SOOO EXCITED to see Mexico compete in the big soccer championship taking place. I thought it would be a good idea to send out winning energy by baking up some game-day inspired cookies and have a viewing party.
No worries if you are not Team Mexico, you can make these cookies inspired by your favorite country in the games. Or you can make it a universal fiesta and make the cookies representing all the teams.
First thing – I needed to up my baking game.
I went shopping! I planned to bake the cookies and decorate them but needed some snacks to go with the spread. I cruised down the international foods aisles to find some other goodies from Mexico! Or at least Mexican-inspired.
How to Make Rolled Sugar Cookies
1-1/2 cups of butter, softened, 2 cups white sugar, 4 eggs, 1 teaspoon vanilla extract, 5 cups all-purpose flour, 2 teaspoons baking powder, 1 teaspoon salt. Shirt-shaped cookie cutter.
Cream the butter and sugar, then mix in the eggs and vanilla. In a separate bowl, combine the dry ingredients. Fold into the wet mixture and blend until you have nice, soft dough. Cover and let set in the fridge overnight.
Preheat your oven to 400 degrees.
Remove and roll into large balls, then roll them out flat and cut out your cookies. Carefully place on the cookie sheet and bake for 6 minutes. I overbaked mine just a tad!
Combine 4 cups of sifted powdered sugar with three tablespoons of meringue powder, and about 6 tablespoons of water. Use your mixer to blend until creamy. Sort white icing into small bowls and add desired colors.
Add a layer of icing on top of each cookie. then add the icing to bags and outline the shirts and add details.
