My brownie confession

Okay, this goes way back. The kids were toddlers and Patrick was performing at a gig. Friday night, I’m at home with my babies, feeling frustrated and bored. I decided to liven up the night and bake a batch of brownies. I gathered up practically every sweet item I could find in the pantry – chocolate chips, nuts, marshmallows, you get the idea.

The kids watched excitedly as I hyped up the process. They were happy I felt happy and believed me 100% when I convinced them we were all in for the Ultimate Friday Night Treat.

Once the oven timer buzzer went off, I let the brownies cool and then gave each kiddo a tablespoon to to dive in and eat from the brownie pan with me.

Savage!

They each took one bite, chewed slowly… and stopped. They exchanged glances then turned to me.

“Mommy, this is toooo much dessert,” DeAngelo confessed.

“No more for me,” Maya added.

In that moment I felt like such a horrible mom, using dessert as a coping tool for Friday night boredom. I assured them they didn’t have to eat anymore and I threw out the whole pan of brownies. The worst part? I had used our eggs for the next day’s breakfast!

And then I prayed they would forget the entire incident, lol!

We didn’t eat brownies for a long time, but I did end up baking a batch every holiday season for family gatherings. Moderation is the path, right?

I made these years ago and need to give them another go round because people loved them. Basically you are adding in peppermint bark into the brownie mix. It all melts together to create a yummy holiday sweet! another idea is to crush candy canes to fine dust and sprinkle them on top of the brownies.

You know this is a thing, right? Everything can go in the air fryer, so why not brownie batter? I have yet to try this delicious recipe, but I hear they come out super-super fudgy and moist and rank as a brownie recipe winner!

Another winner from The Preppy Kitchen! These are fun to watching being made and if you love marshmallow, they look pretty killer to taste. The bright white fluffy goodness on top suits the holiday season just right. You could even go a Rocky Road route and add nuts and chocolate chips.

Anything with only three-ingredients is a winner to me! The Simple Cooking Channel comes through for people who are busy or jus tnot into baking but what to turn something out with minimal effort. Peanut butter, flour and eggs. That’s it! They look so scrumptuous and you could drizzle with melted chocolate or add in chocolate chips.

Microwave Protein Brownie

This one made me do a double take. No flour or eggs. Wha? And it is under 200 calories! You’ll need Greek yogurt, chocolate protein powder and some other basic ingredients, but it works! And looks pretty tasty.

By the way, have you ever wondered the difference between brownies and cakes? I did, so I looked it up.

Brownies use less rising agents, that what keeps them flat and gooey, whereas cakes have more. Brownies also contain more chocolate and less butter, flour and sugar than cakes.

And what about the difference between a cakey brownie versus a fudgy one? According to Martha:

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat — in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you’re going fudgy or cakey.
